Spinatsalat mit Halloumi, Pilzen und Avocado

für 2

1 grosse handvoll spinatblätter | 1 kleiner bund rucola | 3 mittelgrosse tomaten, klein gewürfelt | 2 handvoll champignons, in dünne scheiben geschnitten | 1/2 avocado, in würfel geschnitten | 100 g halloumi, in kleine würfel geschnitten | 1 zitrone, saft | 5 el olivenöl | 2.5 el balsamico | 1 tl akazienhonog | salz, pfeffer, chili und thymian


spinat und rucola waschen, trockenschleudern und grob zerkleinern. aus olivenöl, balsamico, honig, salz und pfeffer ein dressing schütteln. spinat und rucola mit dem dressing anmachen. die tomaten salzen und pfeffern und zu dem salat geben. die avocadowürfel darüber geben. die pilze in etwas olivenöl anbraten, salzen, pfeffern mit etwas zitronensaft beträufeln und mit thymian und chili abschmecken. die pilze über den salat geben. die halloumi würfel in der pfenne kuspig, goldbraun anbraten und ebenfalls über den salat geben. ein deuxe lunch salat!
