Pasteis de Nata (von Hanno & Christina)

diese oberleckere portugiesische spezialität haben christina und hanno zu meinem geburtstagsbrunch mitgebracht, vielen dank ihr lieben!

Für den Teig: (ersatzweise fertiger Bätterteig): 240g Mehl | 1⁄4 Teelöffel Salz | 180ml Wasser | 170g Butter
Für die Creme: 3 Esslöffel Mehl | 300ml Milch | 250g Zucker | 1 Zimtstange | 150ml Wasser | 1⁄2 Teelöffel | Vanilleextrakt | 6 große Eigelb | Puderzucker | Zimt

Teig: Mehl, Salz und Wasser mit einer Küchenmaschine in ca. 30 Sekunden zu einem weichen Teig verrühren. // Teig zu einem ca. 15cm großen Quadrat ausrollen. Mit etwas Mehl bestäuben, in Frischhaltefolie einpacken und 15 min. ruhen lassen. // Teig zu einem ca. 45cm großen Quadrat ausrollen und zwei Drittel davon mit knapp einem Drittel der Butter bestreichen. Das ungebutterte Drittel sorgfältig nach innen falten und dann das letzte Drittel nach innen falten. Dann den Teig mit der Hand etwas flachdrücken, um etwaige Luftblasen zu beseitigen. // Den Teig um 90° drehen, wieder ausrollen und den ganzen Prozess wiederholen. // Den Teig wieder um 90° drehen und erneut ausrollen, diesmal zu einem Rechteck von ca. 45cm × 55cm. Mit dem Rest der Butter bestreichen // Den Teig jetzt aufrollen, ohne daß sich Luftblasen bilden. // Die Rolle in Frischhaltefolie einpacken und 2 Std. oder über Nacht ruhen lassen.

Creme: In einer Schüssel Mehl und 60ml Milch glattrühren. Zur Seite stellen. // In einem kleine Topf Zucker, Zimtstange und Wasser zum kochen bringen. Nicht umrühren. // In einem weiteren Topf die Milch erhitzen. // Die heisse Milch in die Mehlmischung einrühren. // Die Zimtstange erntfernen und dann den Zuckersirup in einem dünnen Strahl in die Milch-Mehl-Mischung einrühren. // Die Vanille dazugeben und eine Minute rühren, bis die Mischung nur noch warm, aber nicht heiss ist. // Die Eigelb einrühren und die Mischung dann durch ein Sieb streichen.

Backen: Backofen auf 250° vorheizen, nach Möglichkeit sogar 290°. // Die Teigrolle auf dem Tisch rollen, bis sie einen Durchmesser von ca. 3cm hat und ca. 40cm lang ist. // 2cm lang Stücke abschneiden und jeweils mit der angeschnittenen Seite nach unten in Muffinformen legen. // Die Teigscheiben jeweils in der Form plattdrücken und dann an den Seiten nach oben drücken, bis der Teig über den Rand ragt. // Jedes Törtchen zu 3⁄4 mit Creme füllen und ca. 9 Minuten backen bis der Teig am Rand braun wird. // Törtchen etwas abkühlen lassen und mit Pu- derzucker und/oder Zimt bestreuen. // Warm oder kalt servieren.
