Reissalat mit Minze und Rucola

für 2

1.5 tassen reis | 2 tassen wasser | 1 kleiner bund rucola, grob gehackt | 5 mittelgrosse tomaten, in kleine würfel geschnitten | 4-5 zweige frische minze, fein gehackt | 100 g schafskäse, zerkrümmelt | 1 handvoll kürbiskerne | 1 limette, saft | 1 schuss olivenöl


den reis waschen mit dem wasser zum kochen bringen, sobald es kocht, ein handtuch und den topfdeckeln auflegen und die platte ausschalten. nach etwa 15 minuten ist der reis gar. den reis abkühlen lassen. alle anderen zutaten in einer schüssel mischen und mit salz und pfeffer abschmecken. anschliessend auch den reis untermischen. mit einer handvoll gerösteten kürbiskernen betreuen und servieren.
