Linsensalat mit Zucchini und Basilikum

Das Rezept (leicht verändert) haben wir bei chefkoch gefunden.

für 3

250 g Linsen | 8 mittelgrosse Tomaten, in kleine Würfel geschnitten | 1 Zucchini in kleine Würfel geschnitten | 2 Frühlingszwiebeln, in Ringe geschnitten | 1 Knoblauchzehe, fein gehackt | 1 kleinen Bund Basilikum, gehackt | 3 EL Balsamico | 1 Spritzer Zitronensaft | Olivenöl | Salz, Pfeffer


Die Linsen nach Packungsanleitung kochen. Die Zucchini würfeln und in mit dem Knoblauch in etwas Olivenöl kurz anbraten. Alles etwas abkühlen lassen und mit den weiteren Zutaten vermischen. Alles ordentlich mit Salz und Pfeffer abschmecken und bei Bedaf nochmal einen Spritzer Zitrone oder noch mehr Balsamico dazugeben. Es tut dem Salat gut, wenn er etwas durchziehen kann.

Wir finden den Salat kann man bestimmt gut variieren mit frisch gehacktem Koriander und/oder gerösteten Mandelblättchen und/oder zerkrümmeltem Schafskäse.
