Kichererbsensalat mit Avocado, Paprika, Koriander und Minze

für 3:
1 grosse dose kichererbsen (alternativ natürlich lieber die über nacht eingeweichten getrockneten) | 1-2 avocados, in würfel geschnitten | 1 handvoll rucola, grob gehackt | 1 gelbe paprika, in würfel geschnitten | 5-6 mittelgrosse tomaten, in würfel geschnitten | 1 zitrone, saft | 1 kleiner bund minze, fein gehackt | 1 kleiner bund koriander, fein gehackt | 1 rote chili, fein gehackt | nach belieben 100 g schafskäse, zerbröselt | meersalz, schwarzer pfeffer

die kichererbsen in einer gorssen schüssel mit den avocadowürfeln, paprika, tomaten, chili und den kräutern mischen. mit zitronensaft, salz und pfeffer abschmecken. nach belieben den schafskäse darüber bröseln und am besten draussen in der sonne geniessen. yummy, wir lieben kichererbsensalat zum lunch!
