Couscous Salat mit gebackenem Gemüse

Einer meiner Lieblingssalate, auch spitze mit Pasta oder Farro, geht immer, am Besten im Sommer irgendwo am Wasser:

für 3

1 rote paprika, fein gehackt | 1 orange paprika, fein gehackt | 1 zucchini, in kleine würfel | 1 fenchelknolle, in kleine würfel | 8 knoblauchzehen, im ganzen | thymian, chili, salz, pfeffer | olivenöl | 2 gläser couscous | 2 gläser kochendes wasser

des gemüse in eine auflaufform geben, mit olivenöl beträufeln, würzen und für etwa 30 minuten bei 200° in den ofen, den couscous mit dem kochenden wasser übergiessen, etwa 5 minuten quellen lassen, dann mit einer gabel auflockern, die knoblauchzehen aus dem gemüse herausnehmen, je nach geschmack von der ein oder anderen zehe das knoblauchmus zu dem gemüse pressen. alles miteinander vermischen und nochmal mit gewürzen abschmecken. einfach und lecker.
