Pfannkuchen mit Lauch-Käse-Füllung

für 2

100 g mehl | 1/2 tl salz | 150 ml milch | 1 ei | 1 stange lauch, in feine ringe | 2 tomaten, in kleine würfel | 1 stückchen butter | 2 el frischkäse | 2 el gratinkäse

aus mehl, salz, milch und dem ei fix einen teig rühren und in einer beschichteten pfanne mit etwas butter dünne pfannkuchen ausbacken.
den lauch in etwas butter andünsten, die omaten dazugeben, mit salz und pfeffer abschmeken und zuletzt den frischkäse unterrühren. die pfannkuchen mit dem gratinkäse bestereuen, die lauch tomaten mischung obendrauf geben und aufrollen. macht froh.
