Puacas von Gülsha

ein hoch auf diese leckeren hefebrötchen, liebe gülsha, danke für den »fisch« :) und natürlich fürs rezept:

Für den Hefeteig: 2 Eiweiss – Eigelb trennen und beiseite stellen, wird später auf die Puacas gestrichen. | 1 Glas (mittleres Wasserglas, ca 200 ml) lauwarmer Milch und 1 Glas lauwarmes Wasser | 1 Päckchen frische Hefe | 250 g geschmolzene Butter | 1 Teelöffel Salz | 2 Esslöffel Zucker | und etwa 1,2 kg Mehl (bei  bedarf auch etwas mehr, so dass ein schöner weicher teig entsteht) beiseite stellen (ich benutze das ganz normale weiße)

Ausserdem: 2 Eier, getrennt | 500 g Schafskäse | 1 Bund Petersilie | Sesam und Schwarzkümmel zum bestreuen

Bis auf das Mehl kommen alle Zutaten in eine Schüssel, es muss darauf geachtet werden dass es lauwarm ist. Dann machst du Stück für Stück Mehl dazu bis der Teig nicht mehr an deinen Händen klebt. Von der Konsistenz her sagt man, soll der Teig so sein wie dein Ohrläppchen.
Finde ich einen süßen Vergleich :) Der Teig muss  schön geschmeidig weich bleiben, unter umständen muss du lange kneten.

Dann den Teig zudecken und in einer warmen Ecke gehen lassen.

In der Zwischenzeit kann die Füllung vorbereitet werden: Dazu eine Dose Schafskäse, ca 500 g (gibt es beim Türken: es steht drauf: Börekli Peynir, d.h. Käse für Börek. Börek sind quasi alle Teigwaren die so gemacht werden)

Käse in eine Schüssel reiben, damit er locker flockig ist und einen Bund Petersilie und nochmals 2 Eiweiss dazu (Eigelb aufbewahren)

Der Käse ist normalerweise recht salzig, so dass du nicht mehr salzen musst, aber probier einfach mal.

Wenn der Teig schon aufgegangen ist (30-60 min.), dann nimmst du immer ein mandarinengroßes Stück ab, drückst es mit den Händen in eine runde Form, legst Füllung rein und klappst dann eine Seite über die Andere und drückst die Ränder mit den Fingerspitzen zu.

Diese Stücke auf das Backblech legen, Backpapier drunter, und mit den Eigelben bestreichen und mit Sesam und Schwarzkümmel bestreuen.

Ich bekomme damit gute 2 Bleche voll.

Den Backofen auf Umluft vorheitzen, 20 min auf der unteren Schiene backen, danach auf die Mittlere Schiene schieben, solange bis die Puacas schon bräunlich sind.
