Antipasti-Duo: Couscous mit Kräuter-Pesto und Crostini mit getrockneten Tomaten und Stracchino

für 4 als vorspeisen

couscous: 2 kleine gläser couscous | 2 kleine gläser kochendes wasser | 30 g basilikum | 15 g minze | 10 g schnittlauch | etwa 50 g walnüsse | 50 ml olivenöl | salz

crostini:8 ciabatta oder baguette scheiben | 50 g stracchino-käse | 5 getrocknete tomaten, in öl


kräuter und walnüsse im mixer pürieren. das olivenöl langsam dazugießen bis eine homogene masse entsteht, die dickflüssig ist. mit salz abschmecken. den couscous mit dem kochenden wasser übergiessen, 5 minuten quellen lassen und dann mit einer gabel auflockern. das kräuter-walnusspesto mit dem couscous gut vermischen. die mandelblättchen kurz rösten und ebenfalls zum couscous geben.


das brot mit etwas olivenöl beträufeln und für ein paar minuten im ofen anrösten. nun die hälfte des käses zusammen mit der hälfte der tomaten im mixer pürieren. 4 brotscheiben mit der käse-tomaten-creme bestreichen. die anderen 4 brotscheiben jeweils mit käse und getrockneten tomaten belegen. die ciabattas zusammen mit dem pesto-couscous anrichten und geniessen.
