Frühlingsreissalat

für zwei

3 tassen reis, arborio | 100 g mais | 2 karotten, in kleine würfel geschnitten | 200 g erbsen, aufgekocht | 100 g grüne bohnen, aufgekocht und in würfel geschnitten | 1 rote paprika, in kleine würfel geschnitten |1 handvoll frische basilikum, fein gehackt | 1 handvoll frische petersilie, fein gehackt | olivenöl | salz, pfeffer


3 tassen reis mit drei tassen gesalzenem wasser zum kochen bringen. sobald das wasser kocht den topf mit einem sauberen geschirrtuch und einem deckel abdecken, die herdplatte ausschalten. nach etwa 15 minuten ist der reis fertig. den reis mit olivenöl beträufeln und die gemuse dazugeben. den basilikum einzufügen und mit salz und pfeffer abschmecken.
